Banana Muffins

Yesterday I made Banana Nut muffins bases on this recipe. I fully intened to make banana bread, but realized that I have no loaf pans (or they are some where in the depths of the kitchen cabinets and I couldn’t find them). Ifollowed the recipe closely, as you need to for baking recipes, here is my slightly modified recipe:

Whole Wheat Banana Nut Muffins
Yields 10-11 muffins

  • 1/2 cup light brown sugar
  • 1 egg
  • 1 1/4 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (freshly ground is best)
  • splash of vanilla extract
  • 1 5oz container nonfat vanilla yogurt (I used Oikos nonfat vanilla greek yogurt)
  • 2 very ripe bananas
  • 1/2 cup walnuts
  1. Preheat oven to 350. In a small bowl, mash the bananas and add the brown sugar, yogurt and egg. Mix well.
  2. In a larger bowl, SIFT the flour, baking soda, salt, cinnamon, and nutmeg. Add the wet ingredients to the dry ingredients and gently fold together — do NOT overmix!
  3. Pour batter into prepared nonstick (or greased) muffin tin and bake for about 20 minutes. Check early – don’t over bake
  4. Let cool for 5 minutes in the pan then pop out of pan and enjoy.

The Last Lunch

Sad news today - our Office MOM was liad off, due to the economy. I don’t know how we will survive - have to remember how to make my own lunch. Here is our final lunch menu - it was a very tasty week:

  1. Last party you went to?
    Back in April I went to a “Rockstar Party” hosted by Rex (in the Rockstar Suite of Chambers Hotel). It was quite fun, got to see some former co-workers and meet some new people. And watch from above while a guy was arrested.
  2. Do you pee in the shower?
    No. And I hope that is same answer my hubby would give.
  3. Have you ever fired a gun?
    Yes, a long, long time ago I fired a shot gun (every farm has one).
  4. Where do you call home?
    My house. But this reminds me of a story – when my brother and I both moved out of our childhood home but still lived near by, he would say, “I am going home” So I asked if he meant home – the farm, or home – his apartment, and he explained it this way: “Home is the apartment; Home Home is the farm”. I always thought that was cute, and I felt the same way.
  5. What’s your favorite board game?
    Currently I am digging Settlers of Catan, esp. the Cities and Knights version.
